Here’s what is planned for this week…. It comes after time with a very dear lady. I spoke with a friend who really inspired me about avoiding waste. Her husband was been laid off several months ago. She shared with me how she has learned the importance of using all you have and wasting nothing, regardless employment status. We should use our resources wisely. It humbled me and I’m convicted of wasting too much, which is why I need to menu plan.
So tonight I went through my freezer and pulled out the oldest meat. I’m also using my fresh / pantry items that are about to expire.
Monday
- Breakfast: waffles and chocolate milk. I use this recipe. I have milk that is borderline bad, which will be very good in waffles. This recipe uses a lot of milk which is why we’re having waffles. Tonight I ground my spelt, so tomorrow morning I’m ready to go. I plan to top with rehydrated freeze dried strawberries and powdered sugar. On Saturday I purchased a quart of Promised Land choc milk from Randall’s quick sale dairy clearance and it needs to be used by Monday.
- Lunch: homemade cheese pizza (I got nice mozzarella cheese on quick sale at Randalls)
- Dinner: leftover pork ribs and pork meatballs, salad and homemade mac/cheese.
- Sweet Treat: chocolate cake. I made this cake on Saturday. I bought a new tub of cocoa at sams and need to use up my old stuff. I also chose a recipe with mayo because I have more mayo than we’ll use on sandwiches or chicken salad. I love cakes made with mayonnaise. They are so moist.
Tuesday:
- drop spelt biscuits, deer sausage and apple slices.
- Pressure cooker pinto beans, rice and raw carrots
- Outback steak and bread (w/o food coloring), potato pearls and salad
- Sweet: chocolate cake
Wednesday
- Banana nut muffins
- Grilled cheese on wheat bread, raw carrots and V8 fusion drink
- sliced skillet hot dogs, new recipe for white beans, roasted red peppers with balsamic vinegar, fresh herb bread
- Sweet: choc chip oatmeal cookies
Thursday
- eggs, toast and fruit
- chicken salad (use up the mayo and canned chicken), crackers and raw carrots
- Italian Steak Soup (using leftover steak from Tuesday) with peasant bread, olive oil dipping sauce and salad.
- lemon icebox pie (I have eagle brand milk and graham crackers I need to use)
Friday:
- cereal, fruit and milk
- refried beans from Tuesday and nachos with taco tvp and raw veggies. I have tortilla chips that need to be used this week.
- grilled jenny – o turkey loin (from the freezer), corn from the freezer that needs to be used and veggie rice using leftover rice from Tuesday’s lunch. (I’ve been heating my leftover rice with a little oil in a skillet, tossing in a few chopped carrots, onions and garlic. Season with salt and pepper)
- homemade brownies using the cocoa I need to move out for the new.
We’ll see if I do better at sticking with a plan. I’m so not a rule follower, even my own rules! A menu just seems like one more rule, but I know it is useful. For other great menu ideas, see orgjunkie.
