Today I made a huge pan of homemade granola. Last night I watched a video that motivated this batch. I couple of months ago I purchase coconut oil for the first time and I also started using local honey about 6 months ago. These are two key ingredients in this granola. I got the recipe from watching green smoothie girl. If you’ve never been to her site, she has great stuff.
I didn’t follow her recipe exactly b/c I used what was in my pantry. Here’s the ingredients I used. You don’t really measure with this, just mix and pour til you get what you like.
I mixed rolled oats, pumpkin seeds, shredded coconut, almonds and pecans.
In a pan, I heated about 2 cups or so of water, coconut oil, honey, sugar (I used secanat) and molasses. Once melted, I added vanilla.
Mix wet/dry stuff and place in a roasting pan strayed with non-stick spray. I baked for 20 minutes at 200 degrees convection. Stir then another 20 minutes. If it is still wet, bake longer.
This is very different from the normal granola I make. Not only do you use coconut oil, you add water to the mixture. I’ve never used water in my granola. I also baked this one a lot longer, which works b/c it is wet. Without the water it would burn. It is really good with the coconut oil instead of butter or veggie oil. I have enough of this to last a while. I’ll take some to a friend who is expecting a baby soon and freeze the other portions. Or hopefully the kiddos will eat it up quickly.
